Naturi Coffee & Chicory Chocolate Cake

A celebration isn’t quite a celebration, unless there’s cake involved. And boy is it time for Pittsburgh to celebrate! Local CMU Graduate Students Jen, Anes, and Aditya joined forces to start Naturi, an Organic Food Company. The cofounders made it their personal mission to revolutionize the food industry, starting right here in the ‘burgh. They have committed themselves to exclusively using the best, most nourishing ingredients in their yogurt. By adding exotic ingredients like Saigon Cinnamon and Indonesian Vanilla, they are able to make delicious Organic Greek Yogurt with less sugar, more protein, and richer flavors than the national brands.

This is pretty exciting news for Pittsburgh, so we decided to celebrate in style with this latest recipe. It’s a fudgey chocolate cake with a decadent chocolate frosting. We highlighted Naturi’s Coffee + Chicory Organic Greek Yogurt for this cake recipe because the deep coffee notes enhance the rich chocolatey flavor profile. Yes, you might think we missed the boat on the whole less sugar thing because we baked a cake with it…BUT the Greek yogurt gives this cake an incredible fudgey/cheesecake texture without all the fat. Plus it packs a ton of protein, so I’m calling this cake a big win. It’s elegant, rich, and unbelievably divine. You’ll never think of chocolate cake the same way again… Cheers to the good things in life!

Cake Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, room temperature (1 stick)
  • 1 1/4 cups sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract (we made a homemade one with Wigle Whiskey)
  • Tiny pinch of espresso powder
  • 3 ounces semisweet chocolate, melted and cooled
  • 8 ounces Naturi Coffee + Chicory Organic Greek Yogurt
  • 1 cup whole milk

Cake Directions

  1. Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans. Set aside
  2. Using a double boiler over low heat, melt chocolate. Set aside
  3. In medium bowl combine flour, cocoa powder, baking powder, baking soda, and salt. Stir and set aside
  4. In large bowl beat butter and sugar on medium speed until combined
  5. Beat in eggs, one at a time. Add vanilla extract and espresso powder until combined
  6. Beat in melted chocolate and Naturi Greek Yogurt
  7. Alternately add flour mixture and milk; beat on low after each addition just until combined
  8. Divide batter evenly between the floured pans. Smooth the top of batter in each pan with a spatula
  9. Bake 25 minutes or until tops spring back when lightly touched
  10. Cool cakes in pans for 10 minutes. Then loosen sides of each cake layer with a small knife or metal spatula
  11. Remove cakes from pan by placing a wire cooling rack on top of one pan; carefully invert pan with rack. Lift pan off cake layer. Repeat with the remaining cake layer. Cool cake layers on wire cooling racks for about 2 hours or until completely cool

Frosting Ingredients

  • 1 (12 ounce) package semisweet chocolate chips
  • 1/2 cup butter (1 stick)
  • 8 ounces Naturi Coffee + Chicory Organic Greek Yogurt
  • Tiny pinch of espresso powder
  • 4 1/2 cups sifted powdered sugar

Frosting Directions

  1. Using a double boiler over low heat, melt semisweet chocolate chips and butter. Stir until combined. Cool 10 minutes
  2. Stir in Naturi Greek Yogurt and espresso powder
  3. Stir in powdered sugar. Once combined, put into electric mixer bowl fitted with whisk attachment and whisk on medium/low until fudgey frosting consistency is achieved
  4. Frost cake and enjoy!
