Beer Peeps

It’s Easter, for Peeps® sake! A very Hoppy Easter to you and your family! This year, we remixed an Easter staple to include our favorite drink: BEER! These boozed up homemade marshmallow treats are made with Penn Brewery’s Ginger Beer. The ginger beer was our obvious go-to because we love the flavor profile of ginger, especially when it’s in candied form. So make these for some-bunny verrry special. Or keep them for yourself when you’re having a bad hare day… We hope you enjoy this peeps offering…Okay, I’ll stop it.

Ingredients for colored sugar

  • 1 cup sugar for each color
  • food coloring gel (we used green, blue, pink, yellow)

 Directions for colored sugar

  1. Combine 1 cup sugar in Ziplock bag with gel coloring
  2. Mix until well combined
  3. Discard larger pieces

Directions for beer marshmallows

  1. In the bowl of the standing mixer, add cold Ginger Beer
  2. Empty packet of gelatin over beer and set aside
  3. In saucepan, combine 1 cup sugar and 1/4 cup water
  4. Stir to combine
  5. Using a candy thermometer, heat over medium heat until it reaches soft ball stage (238 F) (Do not stir while heating!)
  6. When at 238 F, remove from heat and slowly pour into mixing bowl with gelatin
  7. Pour in whiskey extract
  8. Mix by hand for a couple minutes to break any gelatin lumps
  9. When cooled slightly, using the whisk attachment, whisk for 7 minutes at medium-high speed
  10. Immediately transfer to measuring cup with spout (makes pouring easier)
  11. Pour marshmallow mixture into bunny mold
  12. Dust with colored sugar and let rest for 20 minutes
  13. Pour remaining colored sugars in separate bowls
  14. Gently take marshmallows out of mold and place in bowls with colored sugar to coat
  15. Apply eyes and nose and enjoy!
