Rogue Voodoo Doughnut Cake


When life gives you lemons……combine them with beer and bake into a cake that resembles a giant doughnut, or something like that. I can never keep those old-school sayings straight. But these bright pink Rogue bottles have been intriguing me for the last couple of months. They stick out like a sore thumb next to the endless array of brown bottles. My curiosity finally got the best of me; and there I was in line at the grocery store, buying a bright pink bomber bottle of beer. Well, I guess I’ve had stranger days…

Once I got home, I took a swig. And then another, and another. Heeeey this beer is pretty good. Really good actually. It’s a lemony dessert beer, which is brewed to taste just like Voodoo’s Lemon Chiffon Crueller doughnut. I had to cook with it. But what? A giant doughnut cake. That’s what.

Ingredients

  • 1 stick butter, softened
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup Lemon Chiffon Crueller Ale
  • 2 TBSP vegetable oil
  • 1 TBSP whiskey lemon extract
  • 3 large eggs, room temp
  • Zest from one lemon
  • 2 TBSP rainbow sprinkles
  • Favorite icing with pink gel food coloring (we did a lemon cream cheese icing)
  • Handful of Fruit Loops cereal

Directions

  1. Butter and flour bundt pan
  2. Place softened butter into bowl of standing mixer and mix on medium for 1-2 minutes
  3. Place dry ingredients into stand mixer and combine with butter for 30 seconds
  4. Add beer, oil, lemon extract, and eggs and mix on medium-high for one minute
  5. Using a spatula, stir in lemon zest and sprinkles
  6. Pour batter into prepared bundt pan. Bake at 350 for about 32 minutes or until cake is set. Cool before frosting. Decorate with Fruit Loops cereal and enjoy!
